Chimay Rouge is a magnificent roasted beer. Brewed by the Cistercian monks of Scourmont Abbey, it is a Trappist beer. This means that the monks themselves are responsible for producing it in the monastery itself. As an anecdote, it is the oldest Chimay, with Father Theodore's recipe dating back to the end of the Second World War. The result is dazzling.
In its Chimay glass, it looks like a roasted beer with coppery red highlights and is crowned with a firm, unctuous head. The nose is also superb, with aromas of fruits that have developed during fermentation, such as apricot. Malty notes are also perceptible. The palate is surprising: the dry caramel flavors are nicely counterbalanced by the subtle bitterness on the finish. It is therefore a very successful beer.
Finally, it is worth noting that this Belgian beer pairs very well with the abbey's Trappist cheeses.
The story began when, in 1850, the parish priest of Virelles, Abbot Jean-Baptiste Jourdain and the Prince of Chimay, Joseph de Riquet de Caraman, entrusted a mission to a dozen monks from Westvleteren: to settle on the high plateaus of Scourmont with the objective that they still pursue today: "to help the region of CHIMAY". to do so, they decided to produce beer from the water that nature offered them in abundance on these marshy plateaus. Then, they created cheese... A prosperous history that has lasted for many years, based on solid social and environmental values, and is as relevant as ever.
