Some of the oak casks at Samuel Smith's date back more than a century and the individual oak staves have been replaced by Old Brewery cooperages over the years. Gradually, the casks become more and more imbued with the character of the beer fermented in Yorkshire stone squares. Yorkshire Stingo is matured in these well-worn oak casks in the brewery's cellars, from which fruit, raisin, treacle toffee, Christmas pudding and light oak flavors are obtained, before being naturally bottle conditioned.
