Chimay Bleue is a strong beer, dark brown in color, with very fruity aromas, touches of chocolate and spices and a flavor that improves with the passage of time. Since 2015, Chimay honors an ancient method; proceed to a second fermentation of Chimay Bleue in wooden barrels. This method provides exceptional flavors and a complex flavor that varies depending on the type of barrel used. This beer also goes through a third fermentation in the bottle. The Grande Réserve aged in barrels is placed in a black bottle to improve the aging of the product. It is even better to enjoy with your special glass.
History began when, in 1850, the parish priest of Virelles, Abbot Jean-Baptiste Jourdain, and the Prince of Chimay, Joseph de Riquet de Caraman, entrusted a mission to a dozen monks from Westvleteren: to settle on the high plateaus of Scourmont with the objective that they continue to pursue to this day: "helping the CHIMAY region". To do this, they decided to produce beer based on the water that nature offered them in abundance on those marshy plateaus. Next, they created the cheeses... A prosperous story that has continued to last for many years, based on strong social and environmental values, and that remains as current as ever.
