Sour and different, Sour beers are one of the most popular varieties of beer in recent years. We generally associate beer with a pre-dominantly bitter taste. However, this unique style presents a whole range of possibilities, known internationally as Sour.
Brewers, especially in the United States, have embraced the traditional Belgian art of deliberately infecting beer with the same "wild" bacteria that their predecessors so painstakingly eradicated. The result is a pleasantly tart, mysteriously complex and appealing beer.
Sours are also known as 'wild beers' or 'spontaneously fermented' (although there are also mixed fermentation beers). As we have mentioned, their main characteristic is the incorporation of wild yeasts, bacteria and even fungi in their fermentation.
