Zundert 8 Tripel Trappist is a special beer. As monks, they have chosen for a beer that would characterize as slightly against the grain. It is not your everyday tripel. Every Zundert Trappist is a beer for which they recommend you allow yourself some time to fully appreciate it. Zundert 8 Tripel Trappist has a very promising aroma with a hint of herbs and spices. In these herbs, you can literally taste the surroundings that they call home. The herbs traditionally grow in the vicinity of the abbey. The beer starts floral and slightly sweet. If you allow the beer some time, its character will evolve to a light caramel with a beautiful dry finish. In the aftertaste the bitters from the hops will combine with a pleasant spiciness in the background. Zundert 8 Tripel Trappist is chestnut in color and contains 8% alcohol by volume.
The abbey possesses a modern brewery in which two brethren brew Zundert Trappist ales under supervision of a layman brew master. The brewery is classical in set-up with a mash tun, lautering tank and cooking kettle. In the brewery they make a mash out of water and crushed malts. They heat this mash to activate the enzymes that transform starch into sugar. They filter the mash in the lautering tank. The husks from the barley malt work as filtering agent. They boil the resulting clear and sweet wort for about one hour and a half. During the boil, they add hops for bittering. In the whirlpool remove any sediments, but also add some extra hops and proprietary mixture of herbs.
