Oude Kriek Boon is one of the finest examples of the 100% spontaneous fermentation fruit-Lambic style. 400g of wild cherries are fermented together with a blend of young and old Boon-Lambic that has been aged in oak casks. The Oude Kriek is bottled and refermented, it is unsweetened, unfiltered, unpasteurized.

Bière de Saison is fermented with a homemade mixed culture of yeast, wild yeast, and bacteria, then aged in old wine barrels, puncheons, and foudres for 8 to 9 months. then dry hop in season or use the beer as a base for refermentation with seasonal fruit. Expect a dry, effervescent, tart beer along with notes of your chosen additions.
