Bière de Saison is fermented with a homemade mixed culture of yeast, wild yeast and bacteria, then aged in old wine barrels, puncheons and foudres for 8 to 9 months. then dry hop in season or use the beer as a base for refermentation with seasonal fruit. Expect a dry, effervescent, tart beer along with notes of your chosen additions.
