Cecina, high protein, low fat and hardly any calories. Its low fat content, high protein content and gastronomic versatility make it an attractive and novel alternative. Also known as cow ham, it is a salted meat consumed since the Middle Ages when it was found in the houses of the nobility. Cecina leonesa is made by curing the quartering of the hindquarters of large cattle, mainly from native breeds. It has a very toasted red color, uniform, with cherry tones, and has a consistent texture thanks to its fine fat marbling. It has an intense flavor and is rich in minerals such as potassium, phosphorus and magnesium, making it an ideal food to enrich the diet of lovers of good gastronomy.
