This recipe is the specialty of Mrs. Nori, a neighbor of this town. Her recipe was given to me by Tere, one of her students.
The elaboration of homemade desserts has always been very present in the mountain localities and even today they continue to be made in some traditional bakeries. This is the case of Repostería Montesori, which has returned to the old customs of the area in the preparation of the shavings, the traditional sequillos Adelina, and the pastas norinas. One of Montesori's main concerns has been the choice of ingredients for the elaboration of its pastries. Thus, the olive oil, flour, sugar, eggs, white wine, pomace and butter are of first quality and of brands that have already been contrasted in the current market.
